In Barbados they have a fine blend of seasonings for fish which they pack into the seams once they have filleted them. They mince together onions, parsley, thyme, garlic and a little red seasoning pepper, combine the mixture with salt, black pepper and paprika to taste, and lime juice to blend. These ingredients are varied in amounts according to your taste, left for the flavour to develop, then rubbed carefully into the fillets to penetrate the flesh before frying or steaming. The locally much-appreciated kingfish lurks in the deeper waters beyond the reef. It is a very popular fish, for it has very few bones, and marries very well with a sauce made with chestnuts.
